Arctic char is rated "Best Choice" by Seafood Watch. It is similar to salmon and trout: the flesh is a pale pink, like that of salmon, but when cooked it fades to white. Its flavor is mild, and its texture has been described as meaty. Because of its fat content it can be grilled, sautéed, broiled, or even smoked.
