Sea Scallops

Imagine a bite of a perfectly seared sea scallop. That contrast of a crusty—almost crunchy—exterior and a sweet, buttery interior is hard to beat. The sea scallops we offer are shucked on the boat, dry-packed (no chemicals added), and shipped on ice. (Wet-pack scallops—which are soaked in a water-retentive sodium triphosphate solution—exude so much water when cooked that they can't be properly seared.) Dry-pack scallops are firm and slightly tacky to the touch; this quality promotes caramelization. Incidentally, color variation is natural and confirms the absence of a bleaching agent.
Seafood Watch rates dry-pack scallops a "Good Alternative." Low mercury level. (10/20 per pound)

MSC Haddock
Net trawl or line caught, New England
Haddock, cod, and pollock—though all related—have different flavors and textures. Haddock (which we are featuring this week) tends to be slightly thinner than cod and has a finer flake. Most chefs prefer the flavor of haddock to other fish in the cod family, and some compare its taste to that of halibut.
Haddock is excellent for fish and chips, but if you'd prefer a healthier option, try simply roasting it with fresh vegetables. MSC Certified. Seafood Watch rates it a "Good Alternative." Moderate mercury level. Kosher.

We are selling this product because a dietician recommended it for a friend with heart issues. It contains only salt, spices, and dehydrated onion and garlic, and it is the secret ingredient that some say makes Gibsons steaks so good. Because it is a healthy alternative to straight kosher salt, we wanted to try it.
