Pacifico striped bass is the only "true" (non-hybrid) striped bass that is farmed. With a nod to the wine industry and the concept of terroir, the company touts its mastery of meroir, the idea that the sum of the effects of a local environment—such as climate, local nutrients, and other geographical factors—affects its quality and gives it a distinct taste unique to its oceanic environment. Pacifico striped bass has received a 4-star BAP (Best Aquaculture Practices) designation, the highest aquaculture award available.
The fish has a semi-firm texture with skin that crisps well when sautéed. This striped bass can be used in many preparations: raw (as sushi), baked, sautéed, or poached. Chefs including Rick Bayless, Stephanie Izard, and Thomas Keller have used it on their menus. Low mercury level. Kosher.
Steelhead is a cross between trout and salmon. Like the other farmed fish we offer, these fish are raised without the use of antibiotics, hormones, or chemicals. Their flavor is milder than salmon, and they have a tender texture.
They are raised in pure Rocky Mountain spring water and are fed a diet containing the same micronutrients that ocean steelhead eat. Thus they have the same deep-red flesh as their wild counterparts.
Riverence steelhead is in partnership with FishWise, the James Beard Foundation, OceanWise, and TroutEx. Seafood Watch rates these steelhead a "Best Choice." Low mercury level. Kosher.
These wild, tender sardines are sustainably harvested using traditional methods off the coast of Galicia, Spain. They are wonderful on their own,
or toss them with pasta, or use them in salads. Bones are edible.

Ingredients: Salt, spices, dehydrated onion and garlic.
We are selling this product because a dietician recommended it for a friend with heart issues. It contains only salt, spices, and dehydrated onion and garlic, and it is the secret ingredient that some say makes Gibsons steaks so good. Because it is a healthy alternative to straight kosher salt, we wanted to try it.
The verdict? Gibsons proved to be excellent on fish too!
