Grilled Mahi Mahi (or Tuna) Appetizer

This recipe is great for parties and is equally good with either Mahi Mahi or Tuna. If you are feeling "bad," serve it on potato chips.

1 tomato, diced
¼ red pepper, chopped
½ small red onion, diced
½ jalapeno, diced
¼ cup cilantro, chopped
2 limes, juiced
Salt and pepper
12 ounces Mahi Mahi (or Tuna)
Olive oil, as needed
Cucumber slices 

Preheat grill (or grill pan) to medium-high heat.

Brush the fish with olive oil and season both sides of the fish with salt and pepper.

Grill Mahi Mahi for 3 to 4 minutes per side, until just opaque in the center. Set aside

to cool.

​

Combine first 6 ingredients in a medium mixing bowl and season with salt and pepper

to taste.

​

Cut Mahi Mahi into approximately ½ -inch chunks, and add to the vegetables. Spoon

mixture onto cucumber rounds.

Serves 4 generously
