Arctic Char
Land based aquaculture
Everyone loves this fish! Raw arctic char, like salmon, has orange to pale pink flesh, but when cooked it fades to white. Despite the color of its raw flesh, char is genetically closer to trout than salmon. Its flavor is clean and mild, its texture is delicate, and it is full of heart-healthy omega-3’s.
The fat content of arctic char makes it adaptable to most cooking methods; it can be grilled, sautéed, broiled, or even smoked. According to Seafood Watch, farmed arctic char is "an excellent 'Best Choice'." Low mercury level. Kosher.

Dry-Pack Sea Scallops

We like to offer a large variety of fish, and we try to vary our offerings as much as possible. We know we recently offered bay scallops, but we have received several requests for sea scallops. And we aim to please!
A bite of a quickly seared sea scallop begins with a crusty—almost crunchy—exterior and ends with a contrasting sweet, buttery inside. The sea scallops we offer are shucked on the boat, dry-packed (no chemicals added), and shipped on ice. (Wet-pack scallops are soaked in a water-retentive solution meaning that when cooked they exude so much water that they can't be properly seared.) Dry-pack scallops are firm and slightly tacky to the touch; this quality promotes caramelization. Incidentally, the color variation is natural and confirms the absence of a bleaching agent. Seafood Watch rates dry-pack scallops a "Good Alternative." Low mercury level.

This week we are featuring Boss Gibson oysters from the East Coast and Kumamoto oysters from the West Coast. You can buy either a dozen of one type or get a half dozen of each. We want to get the freshest possible, so if these oysters are not available, we'll substitute Beausoleil and/or Malpeque oysters, both East Coast.

We are happy to offer uncooked, frozen, wild caught Key West Pink Shrimp. These plump shrimp get their color from the coral waters off the southwest coast of Florida. Individually Quick Frozen, Shell-On. 21 to 25 per pound.

We are selling this product because a dietician recommended it for a friend with heart issues. It contains only salt, spices, and dehydrated onion and garlic, and it is the secret ingredient that some say makes Gibsons steaks so good. Because it is a healthy alternative to straight kosher salt, we wanted to try it.
The verdict? Gibsons proved to be excellent on fish too!
