The rainbow trout industry is one of the oldest aquaculture industries in the US, dating back to around the 1880's. This Idaho trout farm opened in 1966, and it was the first to earn Best Aquaculture Practices (BAP) certification. It continues to pride itself on its environmental stewardship in all aspects of aquaculture.
Expect a firm texture and a mild flavor. The fish comes butterflied, head-off, and ready to cook. Seafood Watch rates it a "Best Choice." Low mercury level. Kosher.
