Dry Pack Sea Scallops
Trawl caught, Delaware
A bite of a quickly seared sea scallop begins with a crusty—almost crunchy—exterior and is followed by a contrasting sweet, buttery interior. The sea scallops we offer are shucked on the boat, dry-packed (no chemicals added), and shipped on ice. (Wet-pack scallops are soaked in a water-retentive sodium triphosphate solution, meaning that when cooked they exude so much water that they can't be properly seared.) Dry-pack scallops are firm and slightly tacky to the touch; this quality promotes caramelization. Incidentally, color variation is natural and confirms the absence of a bleaching agent.
Seafood Watch rates dry-pack scallops a "Good Alternative." Low mercury level. (10/20 per pound)

Loch Duart Salmon
Marine net pens, Scotland
Because salmon is a popular holiday item, we are again offering Loch Duart Salmon. It is a premium Scottish farmed salmon. (If you are interested in a whole salmon—about 8 lbs, roughly $100.00—let us know.) Loch Duart supplies an award-winning fish that has been served to royalty and at such high-end restaurants as the French Laundry. Chefs and others claim that it tastes more like wild salmon than any of the other farmed salmons. Loch Duart salmon are raised in the cold, clear waters of northern Scotland in a ratio of 98.5% water to 1.5% fish stock. As a result, these fish are active, lean, and healthy. Seafood Watch rates it a "Good Alternative." Low mercury level. Kosher.

Gibsons Steakhouse Seasoning Salt
Ingredients: Salt, spices, dehydrated onion and garlic.
We are selling this product because a dietician recommended it for a friend with heart issues. It contains only salt, spices, and dehydrated onion and garlic, and it is the secret ingredient that some say makes Gibsons steaks so good. Because it is a healthy alternative to straight kosher salt, we wanted to try it.
The verdict? Gibsons proved to be excellent on fish too!
