We are pleased to offer golden tilefish again! The golden tilefish is sometimes called "the clown of the sea" because of its iridescent blue-green back and scattered flecks of yellow and gold. Its flesh is firm with large flakes and has a sweet delicate flavor that some say is similar to that of lobster and crab. If you like crispy skin, sear-roasting the way to go!

Tilefish is part of the Individual Fishing Quota (IFQ) program where participating fishermen are allocated a share of the annual fishing quota. IFQ prevents overfishing and assures individual fishermen a portion of the catch. Seafood Watch rates it a "Best Choice." Kosher. High mercury level.

Skate wings are exaggerated pectoral fins made of cartilage. Sounds delicious, no? Well, they ARE a taste treat. Many compare their flavor to that of scallops. 

Skate are best when super fresh. If you are not planning to cook the night you pick up your fish, best to either freeze it 😠 or opt for the golden tilefish instead. Seafood Watch rates skate a "Good Alternative." Low mercury level.
