Black Sea Bass

Pot and trap caught. US, Atlantic

There are lots of fish that are called sea bass. Black sea bass, though, are actual members of the bass family who inhabit reefs along the East Coast. The flavor of black bass is excellent during the winter because of their fat content.

Their flesh is moderately firm and lean with a mild, delicate taste. They are delicious steamed, poached, or cooked by just about any other method (when sautéing, however, beware of overcooking). Seafood Watch rates it a "Best Choice" or "Good Alternative," depending on how it is caught. Low mercury level. Kosher.

Spanish Mackerel

Gill or cast net caught. US, Atlantic

We are excited to offer a fish we haven't provided before. Spanish mackerel generally has a bad reputation as "too strong," but according to the New York Times, mackerel is milder than salmon and just as delectable. In the past they were hugely popular, later largely ignored. Now they are seeing a 
resurgence in popularity. 

Mackerel can be prepared in any number of ways, cooked, pickled, smoked, or canned. Barton Seaver recommends sprinkling the fillets with salt and letting them sit for 20 minutes before cooking. He says this will firm the texture and enhance the flavor. Seafood Watch rates it a "Best Choice." Medium mercury level. Kosher.
