Fjord Sea Trout

Fjord-based aquaculture, Norway

This sea trout comes from an icy Norwegian fjord. The long, deep channel where the fish are raised was formed by successive glacial ice-flow erosions over the course of 2 million years. It contains a perfect mix of salt and fresh water. Its swift current makes for a highly oxygenated water that these fish love. This trendy trout is the same species as rainbow trout, though—like wild salmon—sea trout flesh is deep red. It is sweeter than salmon, and its fat content contributes a rich flavor.

Sea trout are farmed in uncrowded conditions and are fed sustainably, without chemicals or pesticides. They are good grilled, smoked, sautéed, and marinated. Registered by the Norwegian Food Safety Authority. Low mercury level. Kosher.

Sablefish

Floating sea pens, Cananda

Sablefish is our hands-down favorite fish (and our favorite recipe is Nobu's Sablefish with Miso, see below)! Wild sable is difficult to find here in the US because the bulk of the US catch is exported to Japan. Where it is available, it is even more expensive than farmed. Whatever its price, we believe that Kyuquot Sound farmed sablefish has equal standing (so to speak) with its wild cousin. 

Kyuquot Sound sablefish are raised in partnership with First Nations peoples. The sablefish are fed an FAO-certified organic feed and are harvested using a Japanese method that reduces stress on the fish. Further, the company raises shellfish and kelp downstream. One filters the waste and the other purifies the water. 

Despite its common name (black cod), sablefish is not a member of the codfish family and cooks differently from cod. Its high fat content makes it both flavorful and very forgiving when cooked. Sablefish is also high in polyunsaturated fat, perfect for low-cholesterol diets. It has milky white flesh and a buttery texture. Moderate mercury level. Kosher.

coral waters off the southwest coast of Florida. 
Individually quick frozen using no chemical additives.

Oritz Conservas Boquerones (Marinated White Anchovies)

Ingredients: Anchovy, olive oil, white wine vingegar, sea salt, garlic, parsley. Product of Spain.

Ortiz Conservas marinated white anchovies are filleted by hand, one by one, marinated in wine vinegar and cured for 3 days. Then they are packed in olive oil, garlic, and parsley. Ortiz boquerones are neither excessively fishy nor salty, making them ideal foreating as an appetizer. They are renowned for their delicate flavor
and are delicious served with crusty bread and olives.

We are selling this product because a dietician recommended it for a friend with heart issues. It contains only salt, spices, and dehydrated onion and garlic, and it is the secret ingredient that some say makes Gibsons steaks so good. Because it is a healthy alternative to straight kosher salt, we wanted to try it.
The verdict? Gibsons proved to be excellent on fish too!
