Scallops

Trawl caught, Delaware

A bite of a quickly seared sea scallop begins with a crusty—almost crunchy—exterior and is followed by a contrasting sweet, buttery interior. The sea scallops we offer are shucked on the boat, dry-packed (no chemicals added), and shipped on ice. (Wet-pack scallops are soaked in a water-retentive sodium triphosphate solution, meaning that when cooked they exude so much water that they can't be properly seared.) Dry-pack scallops are firm and slightly tacky to the touch; this quality promotes caramelization. Incidentally, color variation in the raw product is natural and confirms the absence of a bleaching agent. 

Seafood Watch rates dry-pack scallops a "Good Alternative." Low mercury level.

Swordfish shows off its most distinctive characteristic—its meaty, almost steak-like texture—when it is grilled. But however you cook it, it's awesome! Plus, it's an excellent gateway fish for those who need convincing that seafood is a delicious (not to mention healthy) alternative protein! 

Because of new fishery management measures, once-overfished Gulf swordfish is now more sustainable than it has been for decades. The swordfish we are offering is handgear-caught, a fishing method that yields no bycatch (no other creatures are caught and killed in the process). Swordfish can be baked, broiled, grilled, sautéed, or smoked. It's MSC certified and Seafood Watch rates it a "Good Alternative.” Higher mercury level.

We are selling this product because a dietician recommended it for a friend with heart issues.
