Yellow Perch

Net caught, Lake Erie

Perch. We don't like them, we love them! We've tried for months to get perch but because of limits put on the fishery, it has been very hard to get. The shortages are real and won't be featuring it often.

Preparation for perch is simple. Their small size makes them a natural for pan-frying, but you can also put them in the oven. This batch is wild-caught from Lake Erie Canada-side.

Yellow perch is flaky with firm flesh and mild flavor. A Seafood Watch "Best Choice.” Kosher. Low mercury level.

Sockeye Salmon

Seine or gillnet caught, US

The first of the Alaskan salmon has arrived! During the season, we'll be featuring the various varieties of salmon from all over the West Coast. One of the most popular of the salmon types, sockeye is rich and meaty with dark red flesh. Look forward to some other types of salmon in the upcoming weeks.

Of the 5 different types of Pacific salmon (king—also known as chinook—sockeye, coho, pink, and chum), sockeye (or red) is smaller than king salmon, but like king salmon, it is high in omega-3's and has an excellent flavor. We love Alaskan salmon grilled on a cedar plank. Seafood Watch rates it a "Best Choice," and it is MSC Certified. Lower mercury. Kosher.
