Hybrid Striped Bass
Aquaculture, Texas
In response to the near decimation of the wild striped bass population, hybrid striped bass (a cross between wild striped bass and white bass) was introduced. Today there are more than 50 striped bass farms in the US.
Chefs love hybrid striped bass for its sweet, mild, flaky white flesh; it is milder than the wild version. Among sushi chefs it is known as Suzuki striped bass. If you plan to make a ceviche, check out this handy how-to guide. Seafood Watch rates it a “Best Choice.” Low mercury level. Kosher.

Petrale Sole
Trawl caught, West coast
Petrale sole, which is actually a flounder, was given its name for marketing purposes. It is a right-eyed flat fish that lives on the sandy or muddy ocean floor, off the Pacific coast. The fishery is managed by the Pacific Coast Groundfish Collective.
Chefs consider petrale sole to be the best of the West Coast flounders, because of its mild flavor and delicate flesh. It can be prepared almost any way: sautéed, baked, broiled. Seafood Watch rates it a "Best Choice." Low mercury level. Kosher.
