Verlasso Salmon

Verlasso salmon was the first farm-raised salmon to gain a "Good Alternative" rating from Seafood Watch. It is widely considered one of the finest-tasting salmons.
Many things set Verlasso salmon apart from other farmed salmon. One is Verlasso's fish density rate, which is fully half that of the worldwide regulations on farmed salmon. This feature produces a somewhat leaner fish. Another is that pens are fallowed after harvest to allow the water to rejuvenate before the next farming cycle. A third is Verlasso's use of natural algae and only certified fish trimmings for feed. This feature enables the company to use only 1 pound of feeder fish per pound of salmon (most salmon farms use up to 3 pounds of feeder fish per pound of salmon). In other words, if you're a salmon lover, Verlasso is an excellent choice.

Atlantic Halibut
Line caught, US Atlantic Coast
We've had Pacific halibut, this time we have sourced halibut from the Atlantic. Most Atlantic salmon is on the "avoid" list, but the US fishery is sustainably managed by New England Fishery Management Council’s Multispecies Fishery Management Plan.
You will likely not be able to tell much of a difference between the Pacific and Atlantic. Both have thick, meaty, and firm flesh, and a sweet and rich flavor. Halibut is a versatile fish and responds well to grilling, roasting, baking, and broiling.
Halibut is among the largest fish in the sea—it is certainly the largest flat fish. Its usual size ranges from 20 to 40 pounds, but it can grow to 8 feet long.
