These prized sea scallops are super-sweet, plump, and delicious! They are available for only a few short months each year. When they are available, you'll see them on the menus of many of the top restaurants in Chicago. If you like scallops in general, you'll want to try these!

Nantucket day boat scallops are shucked on the boat and dry-packed (dry-pack scallops have no chemicals added and, not being water-soaked, they will caramelize nicely). Low mercury level. IF YOU WANT THESE SWEET SCALLOPS PLEASE ORDER BEFORE SUNDAY AT 8:00 PM!

West Coast Dover Sole

Troll caught, Oregon

West Coast Dover sole, like many fish, has an inaccurate name. It 
isn't a sole at all. It's actually a flounder, and it has a completely different flavor than sole. True Dover sole is milder than West Coast Dover sole. Both have a delicate texture. You can use just about any recipe that call for flounder when preparing West Coast Dover sole.

This fish is abundant in the Pacific, and the fishery is well-managed. The fish we'll be getting is MSC certified. Seafood Watch rates it a "Best Choice." Kosher. Low mercury level.
