Dry Pack Sea Scallops

Trawl (net) caught

A bite of a quickly seared sea scallop begins with a crusty—almost crunchy—exterior leading to a contrasting sweet, buttery interior. The sea scallops we offer are shucked on the boat, dry-packed (no chemicals added), and shipped on ice. (Wet-pack scallops are soaked in a water-retentive sodium triphosphate solution, meaning that when cooked they exude so much water that they can't be properly seared.) Dry-pack scallops are firm and slightly tacky to the touch; this quality promotes beautiful caramelization. Incidentally, color variation in raw scallops is natural and confirms the absence of a bleaching agent. 

Seafood Watch rates dry-pack scallops a "Good Alternative." Low mercury level.

Coho Salmon

So far this salmon season we've had king, keta, and sockeye salmon. This week we are featuring coho (or silver) salmon. Coho is milder and somewhat leaner than king salmon. If you ask three salmon a-fish-ionados to name a favorite type, you'll get three different answers. Which do you like best?

Like all salmon, coho can be cooked in a variety of ways—poached,  roasted, grilled, and sautéed. But because of its milder flavor, it can be paired with a wider variety of sauces. Seafood Watch rates it a "Good Alternative." Low mercury level. Kosher.

or toss them with pasta, or use them in salads. Bones are edible.

We are selling this product because a dietician recommended it for a friend with heart issues. It contains only salt, spices, and dehydrated onion and garlic, and it is the secret ingredient that some say makes Gibsons steaks so good. Because it is a healthy alternative to straight kosher salt, we wanted to try it.
The verdict? Gibsons proved to be excellent on fish too!
