This week we are featuring whitefish, just in time for the High Holidays. Whatever your persuasion, whitefish is a reliable all-around fish. It has large flakes and is thick, rich, and versatile. Its fat content makes it particularly flavorful and excellent for smoking (watch for smoked whitefish in the near future).
You can use whitefish in just about any recipe that calls for a "white fish." Really, a quick sauté with lemon and butter is as good a preparation as any recipe. But if you'd like something elaborate, see our recipes page for more inspiration. Seafood Watch rates whitefish a "Good Alternative." Low mercury level. Kosher.
