This week we are featuring whitefish, just in time for the High Holidays. Whatever your persuasion, whitefish is a reliable all-around fish. It has large flakes and is thick, rich, and versatile. Its fat content makes it particularly flavorful and excellent for smoking (watch for smoked whitefish in the near future).

You can use whitefish in just about any recipe that calls for a "white fish." Really, a quick sauté with lemon and butter is as good a preparation as any recipe. Skate wings are exaggerated pectoral fins made of cartilage. Sounds delicious, no? Well, they ARE a taste treat. Many compare their flavor to that of scallops. 

Skate are best when super fresh. If you are not planning to cook
the night you pick up your fish, best to either freeze it (ง'̀-'́)ง
