Herb Feta Spread

8 oz feta cheese

3-4 oz heavy cream

2 tsp lemon juice

1 clove garlic, chopped

1/2 tsp fresh pulled thyme leaves, hard stems removed

1/2 tsp fresh rosemary leaves, chopped

 Salt and fresh cracked black pepper to taste

 

Combine everything but the herbs in a food processor and puree until smooth, adding more heavy cream and/or lemon juice to desired consistency. 

Remove the spread from food processor to a mixing bowl. Fold in the chopped herbs,  substituting or adding whatever herbs you prefer.

Add salt and pepper to taste.
