Fire up that grill! We've netted some king salmon for this week. A few weeks ago we had sockeye salmon from Copper River, this time we are featuring the more robust king salmon.
To review: there are 6 different types of salmon (king—also known as chinook—Atlantic, sockeye, coho, pink, and chum). Of these, the king salmon is the largest and fattiest, and it is considered to be the most flavorful. It is the highest of all the salmons in omega-3s, and its high natural oil content gives its meat an especially rich taste. Seafood Watch rates it a "Good Alternative." Low mercury level. Kosher.

Golden Tilefish
Fjord based aquaculture, Norway
We are pleased to offer this delicious fish after many months without it. The golden tilefish is sometimes called "the clown of the sea" because of its iridescent blue-green back and scattered flecks of yellow and gold, reminiscent of a harlequin costume. Its flesh is firm with large flakes and has a sweet, delicate flavor that some say is similar to that of lobster and crab. It is one of those fish that has perfectly crisp-able skin, if sear-roasted!
Tilefish is part of the Individual Fishing Quota (IFQ) program, in which participating fishermen are allocated a share of the annual fishing quota. IFQ prevents overfishing and assures individual fishermen a portion of the catch. Seafood Watch rates it a "Best Choice." High mercury level. Kosher.
