The rainbow trout industry is one of the oldest aquaculture industries in the US, dating back to around the 1880's. This Idaho trout farm opened in 1966, and it was the first to earn Best Aquaculture Practices (BAP) certification. Ahi is a Hawaiian name meaning "fire," and this tuna is distin-guished from others by its bright yellow dorsal fin and yellow side stripes. Its flesh is red and it is mild and meaty. It's more flavorful than albacore because of its higher fat content.
