Ahi Tuna #1

The falling temperature doesn't mean that poke is prohibited! But if you prefer your food hot this time of year, just give it a quick sear. This tuna is sushi-grade!

Ahi is a Hawaiian name meaning "fire," and this tuna is distinguished from others by its bright yellow dorsal fin and yellow side stripes. Its flesh is red and it is mild and meaty. It's more flavorful than albacore because of its higher fat content.

We love ahi in poke (as pictured above), but it is also great lightly seared, sautéed, or grilled and served on a bed of lettuce, tomatoes, and avocados. Seafood Watch rates it a "Good Alternative." Higher mercury level. Kosher.

Walleye

Gill-net caught, Lake Erie, Canada

Walleye is so popular that it is the "o-fish-al" state fish of Minnesota, South Dakota, and Vermont. Although it is often called "walleye pike," it is actually a member of the perch family.

What about that name? Walleye has unusual pearlescent eyes that help it to see more clearly in murky water and at night. This factor makes its eyes seem cloudy, but for this fish, the condition of the eyes is not an indication of spoilage.

Walleye has a sweet flavor and a delicate flake, and it can be prepared in virtually any way—sautéed, baked, and grilled. My mother's favorite Florida restaurant serves this Midwestern lake fish topped with artichokes and tomatoes, then drizzled with béarnaise sauce. Seafood Watch rates it a "Good Alternative." Higher mercury level. Kosher.
