This recipe is great for parties and is equally good with either Mahi Mahi or Tuna. If you are feeling "bad," serve it on potato chips.
- 1 tomato, diced
- ¼ red pepper, chopped
- ½ small red onion, diced
- ½ jalapeno, diced
- ¼ cup cilantro, chopped
- 2 limes, juiced
- Salt and pepper
- 12 ounces Mahi Mahi (or Tuna)
- Olive oil, as needed
- Cucumber slices
Preheat grill (or grill pan) to medium-high heat.
Brush the fish with olive oil and season both sides of the fish with salt and pepper.
Grill Mahi Mahi for 3 to 4 minutes per side, until just opaque in the center. Set aside to cool.
Combine first 6 ingredients in a medium mixing bowl and season with salt and pepper to taste.
Cut Mahi Mahi into approximately ½ -inch chunks, and add to the vegetables. Spoon mixture onto cucumber rounds.
