Pan Roasted Fish Fillets With Herb Butter

Ingredients:

  • 4 fish fillets (such as cod, halibut, or sea bass)
  • Salt and pepper
  • 3 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 1 tablespoon minced garlic
  • 2 tablespoons chopped fresh herbs (such as parsley, chives, or tarragon)
  • Lemon wedges (for serving)

Instructions:

  1. Season Fish: Pat the fish fillets dry and season both sides with salt and pepper.

  2. Heat Oil: In a large ovenproof skillet, heat olive oil over medium-high heat until shimmering.

  3. Cook Fish: Place the fillets in the skillet, skin-side down if applicable. Cook without moving for about 3 minutes, or until the skin is crisp and golden brown.

  4. Flip and Add Butter: Flip the fillets and add the butter to the skillet. Spoon the melting butter over the fish as it cooks for another 2-3 minutes.

  5. Add Garlic and Herbs: Add the minced garlic and chopped herbs to the skillet. Continue to spoon the butter mixture over the fish until it is cooked through and opaque in the center.

  6. Serve: Transfer the fish to a serving plate and pour the herb butter from the skillet over the top. Serve with lemon wedges on the side.
