Ingredients:
- 4 fish fillets (such as cod, halibut, or sea bass)
- Salt and pepper
- 3 tablespoons olive oil
- 3 tablespoons unsalted butter
- 1 tablespoon minced garlic
- 2 tablespoons chopped fresh herbs (such as parsley, chives, or tarragon)
- Lemon wedges (for serving)
Instructions:
-
Season Fish: Pat the fish fillets dry and season both sides with salt and pepper.
-
Heat Oil: In a large ovenproof skillet, heat olive oil over medium-high heat until shimmering.
-
Cook Fish: Place the fillets in the skillet, skin-side down if applicable. Cook without moving for about 3 minutes, or until the skin is crisp and golden brown.
-
Flip and Add Butter: Flip the fillets and add the butter to the skillet. Spoon the melting butter over the fish as it cooks for another 2-3 minutes.
-
Add Garlic and Herbs: Add the minced garlic and chopped herbs to the skillet. Continue to spoon the butter mixture over the fish until it is cooked through and opaque in the center.
-
Serve: Transfer the fish to a serving plate and pour the herb butter from the skillet over the top. Serve with lemon wedges on the side.
