Redfish

Net pen-based aquaculture

In the 1970's Paul Prudhomme popularized redfish with his classic dish, Blackened Redfish. Soon after, redfish populations declined dramatically. Strict federal regulations on the amount of the catch have helped it rebound.

Redfish can be compared to snapper. This delicious fish is mild and firm and has a sweet flavor. It can be baked, sautéed, grilled, and (of course) blackened.

The redfish we are offering this week comes from a sustainable farm in Mauritius. Clean Fish, an environmentally conscious company,brings together eco-minded small artisan farmers and fisherman and discerning chefs from all over the world. The company has been named a “Responsibility Pioneer” by TIME Magazine and voted one of America’s “Most Promising Social Entrepreneurs” in Business Week. It has also received Food & Wine Magazine’s Eco-Ocean Awards. This redfish is exceptional! Low mercury level. Kosher.

Perch. We don't like them, we love them! Their small size makes them a natural for pan-frying, but you can also put them in the oven. Once nearly endangered in the Great Lakes, yellow perch have now rebounded, particularly in Lake Erie. This batch is wild-caught from Lake Erie Canada-side. 

The fish is flaky with firm flesh and mild flavor. A Seafood Watch "Best Choice.” Kosher. Low mercury level.

We are selling this product because a dietician recommended it for a friend with heart issues.
