6-month aged Manchego is probably Spains most famous cheese. It has a firm but creamy texture with rich, buttery, and nutty flavors. Made exclusively from the milk of Manchega sheep in the La Mancha region, it is a Protected Designation of Origin (PDO) cheese.
This Manchego is aged for 6 months or longer, and is a semi-firm cheese with a rich golden color and small holes. It ranges from mild to sharp, depending on how long it is aged.
Serving and Pairing
- Pairings: It pairs perfectly with Spanish red wine, dry white wine, sherry, port, fresh grapes, dried fruits, and nuts (like Marcona almonds). It is also classically served with quince paste (membrillo).
