King salmon (also known as Chinook) is the largest and richest of the six salmon species—Atlantic, Chinook (King), Sockeye, Coho, Pink, and Chum. Prized for its buttery texture, exceptional flavor, and high natural oil content, it's also the richest in heart-healthy omega-3 fatty acids.
This fish is an outstanding choice for grilling, roasting, or pan-searing, and its rich flavor needs little more than salt, pepper, and a squeeze of lemon.
Seafood Watch rates it a "Good Alternative." Low mercury level. Kosher.
