The halibut season has just begun and, while halibut fillet prices are still sky-high, the cheeks are more reasonably priced. You probably already know how meaty and flavorful Alaskan halibut is. The cheeks are even sweeter. They look somewhat like scallops, but they have a texture similar to that of chicken. They can be grilled, roasted, or pan-seared. These days halibut is strictly managed by the Pacific Halibut Commission. Seafood Watch rates it a "Good Alternative," and it is MSC certified (Marine Stewardship Council). Kosher.
