This week we are featuring lemon sole (blackback sole). Despite its name, this delicate flatfish isn’t related to lemon or sole! Known for its mild, sweet flavor and tender, flaky texture, lemon sole is a favorite among chefs for simple preparations that let its subtle taste shine. It’s a sustainably managed species in many North Atlantic fisheries, often caught with care to protect the ocean floor and surrounding marine life. Perfect pan-seared or gently baked, it’s an elegant choice for anyone who loves clean, fresh seafood with a light touch.
The fillets average 6 to 10 ounces and will come skinned. Seafood Watch rates lemon sole a "Good Alternative." Low mercury level. Kosher.
