We are excited to feature New Zealand red snapper (also known as tai snapper, or sea bream). It is longline-caught and harvested using the Ikejime method.
Ikejime, meaning “alive kill” in Japanese, is a time-honored technique for humanely harvesting fish. The process involves a precise brain spike to instantly eliminate stress, followed by immediate bleeding to remove a primary source of bacterial degradation. This careful handling enhances the fish’s flavor, texture, and shelf life. It is a true day-boat operation. According to the producer: "Iki-jime is a lot of work - it means every single fish must be handled one at a time. It limits the amount of fish you can catch in a day because you have to devote time to every single one to make sure it is going to be optimum in quality."
New Zealand red snapper has a delicate, silky texture and a naturally sweet, clean taste due to the presence of amino acids such as glycine. It can be cooked in a variety of methods and it is SUSHI GRADE.
Responsibly harvested and carefully handled, this fish is a Seafood Watch "Good Alternative." Kosher.
