There are many pasta producers in Italy, but Pasta di Gragnano stands out from the others. Pasta di Gragnano's products differ from other artisanal pasta because the farmer is also the pasta maker. The pasta produced is the result of a careful selection of the best hard wheat, bronze drawing (in which a bronze die roughens the surface, making sauce cling to it better), and drying at low temperatures.

According to Forbes magazine, comparing other spaghettis to Pasta di Gragnano: โ€œIt is like comparing ham with Prosciutto di Parma.โ€ In fact, once you have had a taste of this toothsome pasta, itโ€™s hard to imagine eating anything else. The flavors of the wheat shine through each noddle and the structure of the pasta has a real bite to it, making it the star of the dish instead of a mere accompaniment used to scoop up the sauce.

It is made from 100% Organic Italian wheat. This excellent durum wheat pasta is worked in a bronze mill (its texture roughened to cling to sauces) and dried slowly to develop its flavor. The spaghetti dries for 3 days, which preserves the scents and the hardness conferred by the durum wheat. It retains its straw-yellow color during and after cooking, as it retains its hearty taste of durum wheat and its scent of ripe cereals. The high quality of this pasta is particularly evident when cooking: it cooks evenly, does not stick together, and preserves its shape. After the cooking process, it is elastic but wonderfully firm in the bite.
