The rainbow trout industry is one of the oldest aquaculture industries in the US, dating to the 1880's. Idaho's Clear Springs trout farm opened in 1966, and it was the first farm to earn Best Aquaculture Practices (BAP) certification. It continues to pride itself on its environmental stewardship in all aspects of aquaculture.
Rainbow trout is noted for its firm texture and mild flavor. It comes butterflied, head-off, and ready to cook. Seafood Watch rates it a "Best Choice." Low mercury level. Kosher.
